I was recently asked by Ciao Gusto to prepare a recipe using one of their products. So when I spotted the Valsoia Coconut & Almond Milk I just knew what I had to create – a chia pudding recipe! I am very familiar with the Ciao Gusto products such as pesto and olive oil – these are a staple in our household with a fussy toddler! But I wasn’t aware that their product range was quite so diverse.
My recipe inspiration was derived from last Christmas when we escaped the expat life and went home to Australia for a few weeks. An aunt made chia pudding for breakfast on Christmas Day and they were absolutely delicious. So whilst this is my first attempt at showcasing a recipe on my blog, I hope you enjoy it and are inspired to try it yourself.
Benefits of Chia Seeds
Chia seeds are deemed a super food due to all the amazing health benefits they offer. Originally from central america, they are packed with antioxidants, fiber, omega-3 fatty acids and protein. They are easy to add to your diet – simply include them in smoothies, home-made bread or make a chia pudding!
Valsoia Coconut & Almond Milk
These days, it is not uncommon for people to steer clear of traditional dairy milk products. Either due to health or dietary reasons. Therefore, a great alternative to traditional milk is coconut or almond milk, like the products offered by Valsoia. The Valsoia Coconut & Almond Milk contains calcium and vitamins, is naturally lactose free, Gluten free, and low in sugar and fat. Plus, it is suitable for vegans.
I found the milk to be absolutely delicious and a great choice for the chia pudding recipe. You can taste the tropical notes of coconut and nuttiness from the almonds. It makes me sound like a wine connoisseur … but the flavors were really lovely and this will become a staple in our fridge.
How To Make Coconut & Almond Chia Pudding Recipe
Serves: 2
Prep Time: 5 minutes
Setting Time: 3-4 hours
Ingredients
- 1 cup of Valsoia Coconut & Almond Milk
- 4 tablespoons of Chia Seeds
- 1 teaspoon of Vanilla Essence
- 1 tablespoon of Honey
- 2 tablespoons of Greek Yoghurt
To Garnish
- Assortment of fruits such as strawberries, blueberries, kiwi fruit or bananas
- Granola or Mixed Seeds
- Honey or Passion Fruit Pulp
Method
- Mix all of the ingredients in a mixing jug – this will make it easier to pour into the serving jars. Stir well to ensure there are no clumps of chia seeds in the mixture.
- Poor the mixture into mason jars or similar and put in the fridge to set.
- Leave for a minimum of 3-4 hours, or preferably overnight.
- Stir the pudding and garnish with your choice of fruits and / or granola. Drizzle with honey or passion fruit pulp.
- Enjoy!

I have to say it looks incredibly healthy and delicious. I would never take the time to make something like this for myself though I wish I would now looking at your pictures. With twin babies I get so little time these days but I will definitely try to make an effort. I’ve also never tried coconut or almond milk so that interests me too! Lovely recipe idea! #KCACOLS
